if it was mine, I'd just use the 750 the way it is. It will take a little tuning, but it should run fine. I've never seen an engine that is over-carbed. An engine will only use the amount of air that it needs, no matter what size your carb is. Think about it, when it's wide open, and the motor is only at 3000 rpm, a 289 wont need more than 300 or so cfm, so in theory a 600 would be too much carb at that speed. Another thing to think about, a 600 cfm carb can flow more air than 600 cfm, but most of them can only flow enough fuel to support 600 cfm of air and still control the air/fuel mixture efficiently. Point is, you could use a 1050 carb on a stock 289, if you change the jets and powervalves, it would work fine. It might lose a bit of bottom-end power, but it will pull like gangbusters on the top end
